Bread With Bread Flour

I'm doing a research project on bread, so today, I tested the bread flour recipe!

Here it is:


150 grams of bread flour

8 grams of powdered sugar

5 grams of fresh yeast

3 grams of salt

95 grams of water

6 grams of light olive oil


1. Add all dry ingredients except salt. Mix till roughly combined (~10 seconds)

2. Add salt

3. Knead using an electric mixer (at speed 2 out of 5) for 4 minutes

4. Knead using oiled hands for 2 minutes

5. Oiled the countertop and spread the dough out into a rectangular shape

6. Fold the dough over itself twice. Seal the edges.

7. Proof at room temperature in a cardboard container (wrapped with a towel) for 40 minutes.

8. Pre-heat the oven for 10 minutes at 180 degrees Celsius.

9. Bake it on the second rack from the top for 25 minutes.

10. Cool for 4 hours.

11. Slice it after 4 hours.

It's pretty much the same as the all-purpose flour recipe. :)
