Day 35 (03/10): Vanilla Caramel Cupcakes

I got so many orders for these that I had to make them again for day 34 (not that I'm complaining!). :D

I followed the same process used on day 33. To make four cupcakes, I used one-third of the recipe. Since this order was last-minute, I was hurrying to make the cupcakes, and I did not cool them properly, which I figured wouldn't be too much of a problem.

BIG MISTAKE. Please don't ever do this. It is worth getting your order fifteen to twenty minutes late only to cool your cupcakes. It will cost you so much more time if you frost the cupcakes without cooling – the heat from the cupcakes will melt the frosting right off (yes, even in the fridge). You will then have to freeze them, remake the frosting, let the frosting set in the fridge for a bit, and then re-frost them. Been there, done that. It is a pain in the neck. This is your reminder to let your cupcakes cool!
