Day 39 (07/10): Eggless Muffins

For day 39, I made eggless muffins using this recipe.
I loved the way these tasted, except for the fact that they had a harder and crunchier top. But I think I figured out the reason why, so it's all good. :)
Basically, the recipe calls to dissolve the sugar in hot water. Trying to be smart, I dissolved all the liquid ingredients in a pot on the stovetop on high heat. So, when the muffins went into the oven, they were very hot.
The excess heat probably caused them to develop a crunchy top. I'd like to retry this recipe to see what happens if I let the liquid ingredients cool down before adding them to the dry ingredients!
