Happy Birthday, Saanvi! + How To Decorate A Cake

Day 280 (5th June)

I AM IN LOVE WITH THIS CAKE. PERIOD.

I made this for Saanvi's birthday — she very kindly ordered it from me! I won't share the exact recipe (again, it's for an order), but here are the steps of the process of assembling the cake:

  • Start with two vanilla sponge cakes.

  • Place a cake board/parchment paper on a turntable.

  • Place one vanilla cake on top of the cake board/parchment paper.

  • Create a "well" by piping buttercream on the circumference of the cake.

  • Add caramel/any other filling to the middle of the cake.

  • Place the second sponge on top.

  • Use buttercream to do a crumb coat.

  • Refrigerate the cake until set.

  • Scrape off the excess buttercream. Patch the areas that are not covered well.

  • Using a chocolate ganache and a teaspoon, create a drip on the sides of the cake.

  • Chill the cake for five more minutes.

  • Pipe buttercream on the edges of the cake.

  • Add sprinkles to the bottom of the cake.

  • Add flowers on top of the piped border.

  • Add freeze-dried strawberries to the top of the cake near the border.

  • Embed small silver pearls on the top of the cake.

  • Write the age in the middle using sugar icing!

I'm aware that this sounds complicated, but I tried my best to be as clear as possible. If you have any questions, send in a comment, and I'll reply as soon as I can.

(Also, I hope y'all like the collages :D Photo credits to Saanvi, who is a very talented photographer. Check out her page here!).
