Muffins Made From Applesauce

Day 342 (6th August)



I don't think I've ever used applesauce as an egg replacement before, but it surprisingly works well. You can barely taste the applesauce.


I started by making applesauce (apple + pear sauce) from this video. It tasted delicious but looked like vomit, so I decided to use it to make a few muffins.


I used this applesauce loaf cake recipe to make the muffins. They tasted pretty delicious! A little denser than I would expect — but again, that is probably just the recipe and not a result of the applesauce.


I do have some leftover applesauce that I want to substitute as a 1:1 egg replacement! Stay tuned. :)
