Pink Lemon Mousse Cups

Day 143 (19th January)

I love making strawberry flavoured yellow desserts and lemon flavoured pink desserts. It messes with your brain. You feel like you should taste the strawberry, but you somehow taste lemon.

Anyway, I made mini lemon mousse cups! Here is the recipe:

1) Melt white compound chocolate (about 1/2 cup) with pink gel food colouring.

2) Spread it in hemispherical moulds and wait for it to set.

3) Make lemon curd. I made lemon curd without a double broiler for the first time, and it went so well! I am never going back to the double broiler method again.

4) Whip 1/4 cup of heavy whipping cream, a tablespoon of lemon curd, and a tablespoon of powdered sugar.

5) Pipe into the shells and enjoy!
