You've Got To Get On This Mango Sticky Rice
Day 270 (26th May)

Mango sticky rice has been on my baking to-do list for SO long. So, I simply had to make it when mangoes came back in season!
I browsed a lot of recipes on the internet to come up with this one. :D
Recipe (For Three Servings)
Ingredients:
For the rice:
1 cup of glutinous rice
Enough water to just submerge the rice
1/2 cup of whip topping (substitute in the same ratio with heavy cream)
Three tablespoons of milk
A pinch of salt
Two tablespoons of brown sugar
For the sauce:
1/2 cup of whip topping
Five tablespoons of brown sugar
Two tablespoons of milk
Toppings:
One ripe mango
Directions:
Soak the rice in water for about half an hour.
Add the whip topping, milk, salt, and brown sugar to the rice and water mixture.
Stir everything till combined.
Cook the rice on low heat for just short of twenty minutes. Make sure to scrape the bottom of the pot so that the rice does not burn.
Meanwhile, cut the mango into pieces.
After the rice has cooked, use an oiled steel bowl to shape it into individual rice servings.
Make the sauce by combining the whip topping, milk, and brown sugar in a pan for about two minutes till the mixture is homogenous.
Add the sauce to the rice and top with mangoes.
Serve immediately!
I loved it. It tastes like a Thai version of kheer if that makes sense? 100% worth trying.
